Ingredients
- 1/3 cup rice, uncooked
- 1 tsp olive oil
- 1/2 cup carrots, sliced thin
- 1 baby bok choy, halved lengthwise
- 1 tsp grated fresh ginger
- 1 tbsp chopped chives
- 1/8 tsp salt
Instructions
- 1Cook the rice according to the package directions.
- 2Heat the olive oil in a skillet over medium heat and cook the carrots for 2 to 3 minutes.
- 3Add the bok choy, ginger, and salt, then cook until the bok choy is tender but still bright.
- 4Divide the rice between bowls and top with the vegetables.
- 5Finish with chives and serve warm.
This keeps the grain-bowl idea but skips chicken so it stays realistic for lunch. The result is intentionally plain and works well as a baseline meal.
