Why I created this site
Hi, I'm Tracy Elsinger. After years of unexplained digestive discomfort, severe morning fatigue, and frustrating doctor visits, I was directed to low-FODMAP eating, and I spent years on it. It never fully worked for me, and sometimes it made things worse.
Even a strict low-FODMAP meal could still make me sick, which was incredibly frustrating. Part of the confusion was that avoiding acid for reflux overlapped with some histamine triggers (vinegar, for one), while other foods that are fine on low-FODMAP, like aged cheeses and leftovers, kept making me sick. With the rules overlapping like that, it took years to see what was really going on. Eventually I found enough information to try low-histamine and low-acid eating, and it has worked really well for me.
My approach is a blend, not a single diet. These recipes are fresh, low-acid, and low-histamine, and I still avoid fresh garlic and white onions, which low-histamine lists usually allow but I can't tolerate. I've kept every low-FODMAP recipe I developed over those years, because they took a lot of work and may be exactly what someone else needs, so you'll find both kinds here and can filter by what fits you. Your triggers may be different, so treat this as one person's experience, not medical advice.

My Journey to Understanding My Sensitivities
For years, I struggled with unexplained fatigue, brain fog, joint stiffness, and constant digestive discomfort. I visited countless doctors, had every test imaginable, and everything came back "normal." I was told it was stress, or age, or just something I'd have to live with.
I refused to accept that. I started experimenting with my diet—eliminating foods, trying different approaches, keeping detailed journals. I spent years on the low-FODMAP diet. It didn't fully work, and sometimes it made things worse. Eventually I found enough information to try low-histamine and low-acid eating, and that has been working really well for me. I still can't eat fresh garlic or white onions, even though low-histamine lists say they're fine, so what I follow is a blend. That's when I realized my sensitivities were more complex than any single diet could address.
This site is the resource I wish I had during those difficult years. Every recipe here has been tested on my own sensitive stomach with multiple sensitivities. I know how frustrating it is to follow a low-FODMAP recipe perfectly and still feel awful. These recipes work when others don't—they're designed for people whose digestive issues don't fit into neat categories.
